Site History:

Connecticut, Norwalk especially, has always been on the vanguard of the oyster industry. Legends exist about foot-long oysters with five-pound meats, growing in beds sizeable enough to restrict navigation. For the last half of the 19th century and for two decades into the 20th, the oyster was the most popular shellfish in the United States. Connecticut was blessed with natural oyster beds spanning many square miles, and it held the crown as the bivalve's major producer. Those of you who thought that these tasty mollusks were under-appreciated, will be happy to know that Connecticut adopted the oyster as its state shellfish in 1898
